No-Bake Berry Cheesecake

  • Ingredients:
    • 1 1/2 cups crushed graham cracker crumbs
    • 1/4 cup melted unsalted butter
    • 8 oz cream cheese, softened
    • 1/2 cup powdered sugar
    • 1 tsp vanilla extract
    • 1 cup heavy cream, cold
    • 1 cup mixed berries (strawberries, blueberries, raspberries)
    • 4-6 small jars or glasses
  • Instructions:
    1. In a small bowl, combine crushed graham cracker crumbs and melted butter. Mix well until crumbs are moistened.
    2. Divide the crumb mixture evenly among your jars, pressing down gently to form the base.
    3. In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract with an electric mixer until smooth and creamy.
    4. In a separate bowl, whip the cold heavy cream until stiff peaks form.
    5. Gently fold the whipped cream into the cream cheese mixture until just combined.
    6. Spoon or pipe the cheesecake mixture over the graham cracker crusts in the jars.
    7. Top generously with fresh mixed berries.
    8. Chill in the refrigerator for at least 1-2 hours before serving to allow the cheesecake to set.
